After months of research and travel, we discovered a remarkable community of farmers and producers across Europe and Asia, masters of their craft who have refined caviar-making techniques over decades.
Together, we work with a selection of small, heritage farms, creating carefully managed habitats that prioritise the well-being of the sturgeon while drawing from traditional methods.
The purity of the water, the quality of the air, and the surrounding environment all play a vital role in the development of the caviar.
This approach ensures that Runan-certified farms operate ethically, support local communities, and uphold the highest standards of craftsmanship.

STURGEON PROTECTION
Sturgeon, now endangered and listed on the IUCN Red List, require global protection. Preserving these ancient species goes beyond harvesting, it demands long-term responsibility.
Our commitment surpasses industry standards through strict farming practices that prioritise care, longevity, and low-stress environments.
To further support conservation, for every 100 grams of caviar produced, we contribute to initiatives that support sturgeon repopulation and ecosystem restoration.
It is vital to give back to the environments that sustain these remarkable creatures.

The Runan packaging is thoughtfully designed in Germany with a focus on sustainability from beginning to end.
Each element is not only recyclable but crafted to be kept as a keepsake, inspired by the Caspian Sea. From the Pebble to the Cool-packs, every component has a purpose and reflects the use of natural materials.
AN ANCIENT MODERN RECIPE
Sturgeon are delicate and highly sensitive, and their well-being directly shapes the quality of the caviar they produce.
To ensure exceptional roe, we prioritise low-stress, carefully controlled environments and avoid unnecessary handling or relocation.
Our caviar is prepared fresh using the traditional malossol method, with minimal salt to preserve clarity of flavour and texture.
Unlike many producers, we prioritise maturity over speed, allowing the sturgeon to develop over many years before harvesting.
Runan operates in strict adherence to CITES (the Convention on International Trade in Endangered Species), ensuring our practices are fully compliant with global conservation standards.
